- 1 (8 ounce) package soba noodles (I like to use 100% buckwheat)
- 3 tablespoons seasoned rice vinegar
- 3 tablespoons soy sauce
- 2 teaspoons fresh ginger, finely chopped
- 2 garlic cloves, minced
- 1/2 - 1 fresh jalapeno pepper, seeded and finely chopped
- 2 green onions, finely chopped, including tops
- 1/4 cup chopped fresh cilantro (optional)
Directions

1Cook noodles in boiling water according to package directions. When tender, drain and rinse with cold water.

2Mix all the remaining ingredients, then pour over the noodles and toss to mix.
