- 4 skinless chicken breast halves
- salt, to taste
- black pepper, to taste
- paprika, to taste
- 1 egg yolk
- 1/2 cup honey
- 1/4 cup rum
- 1/2 cup chicken stock
- 2 cloves garlic, crushed
- 1/4 cup preserved gingerroot, chopped
- 1/4 teaspoon nutmeg
Directions

1Preheat the oven to 375.

2Season the chicken with salt, pepper, and paprika to taste.

3Put the chicken in a shallow roasting pan.

4Beat egg yolk until light and then add the honey, rum, and chicken stock and beat until well mixed.

5Stir in garlic, ginger, and nutmeg.

6Pour the sauce over chicken and bake at 375 degrees for 45 to 60 minutes.

7Baste at least every 15 minutes.
