- 2 teaspoons Sesame Oil
- 2 Tablespoons Fresh Ginger, Grated
- 1/2 cups Scallions, Sliced Plus Extra For Garnish If Desired
- 4 cups Cooked Rice (I Used Basmati)
- 3 whole Eggs
- 2 Tablespoons Soy
Directions

1In a large skillet, heat oils over medium-high heat. Add ginger and scallions and cook until fragrant, about two minutes.

2Add rice and stir to combine. Crack eggs into a bowl and lightly beat with a fork. Pour over rice and stir to combine. Cook until egg is set.

3Add soy. Stir to combine and serve. Garnish with fresh scallions.
