Ginger Scallion Fried Rice

  • 1 Tablespoon Vegetable Oil
  • 2 teaspoons Sesame Oil
  • 2 Tablespoons Fresh Ginger, Grated
  • 1/2 cups Scallions, Sliced Plus Extra For Garnish If Desired
  • 4 cups Cooked Rice (I Used Basmati)
  • 3 whole Eggs
  • 2 Tablespoons Soy

Directions

    In a large skillet, heat oils over medium-high heat. Add ginger and scallions and cook until fragrant, about two minutes.

    Add rice and stir to combine. Crack eggs into a bowl and lightly beat with a fork. Pour over rice and stir to combine. Cook until egg is set.

    Add soy. Stir to combine and serve. Garnish with fresh scallions.
