  • 6 medium carrots
  • 2 tsp. lemon juice
  • 3/4 tsp. salt
  • 1/2 tsp. ground ginger
  • dash of pepper
  • 2 Tbsp. margarine

    Peel carrots and cut in 1/2-inch slices.

    Put in buttered 1-quart casserole dish.

    Mix lemon juice and seasonings; pour over carrots.

    Dot with margarine.

    Cover and bake in hot oven (400°) for 1 hour, or until carrots are tender.
