  • 1 or 2 (2 lb.) fish, cleaned with head and tail on
  • flour
  • 3 or 4 Tbsp. peanut oil
  • 1 c. hot water
  • 1/4 c. shoyu sauce
  • 1/4 c. dry sherry
  • 1/2 tsp. raw sugar
  • 2 Tbsp. ginger, peeled and cut into thin strips
  • 2 to 4 green onion shoots, sliced into 2-inch pieces
