  • 1 5-ounce can fat-free evaporated milk
  • 2 teaspoons cider vinegar
  • Cooking spray
  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • 1 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup honey
  • 1 6-ounce jar pureed baby-food sweet potatoes
  • 2 tablespoons egg substitute or 1 large egg white
  • 1 tablespoon plus 2 teaspoons canola or corn oil
  • 1/2 cup chopped peeled apple

    In a medium mixing bowl, stir together the milk and vinegar.

    Preheat the oven to 350F.

    Lightly spray a 9-inch square baking pan with cooking spray.

    Meanwhile, in a medium bowl, stir together the flours, ginger, baking soda, and cinnamon.
