  • 1 12 cups plain flour
  • 1 teaspoon ground ginger
  • 34 teaspoon ground cinnamon
  • 12 teaspoon baking soda
  • 1 14 teaspoons baking powder
  • 12 cup butter
  • 14 cup packed brown sugar
  • 1 large egg
  • 12 cup golden syrup
  • 12 cup boiling water

    Preheat oven to 350F (175C).

    Grease and flour a loaf tin.

    Sift together flour, ginger, cinnamon, baking powder, baking soda; set aside.

    In a large bowl, cream butter and brown sugar until light and fluffy.

    Beat in eggs and golden syrup.

    Add flour mixture and water; beat until smooth.

    Pour batter into pan.

    Bake for 30- 35 minutes or until a toothpick inserted into cake comes out clean.

    Cool in pan on a wire rack for 10 minutes.
