Ingredients
- 5 1/2 c. sifted flour
- 1 Tbsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 1 tsp. cinnamon
- 3/4 tsp. ginger
- 1 c. shortening
- 1 c. sugar
- 1 egg, beaten
- 1/2 tsp. vanilla
- 1 c. dark molasses
- 1/2 c. strong coffee
Directions

1Sift together flour, soda, baking powder, salt, ginger, and cinnamon.

2Cream shortening; add sugar gradually.

3Beat until light.

4Add egg and vanilla.

5Add molasses and coffee, then sifted dry ingredients; mix well.

6Chill.

7Roll out on lightly floured board to thickness desired.

8Cut with cookie cutter.

9Place about 1 inch apart on greased baking sheet.

10(Pam or vegetable spray works well.)

11Bake in hot oven at 400° for 8 to 10 minutes. Thinner cookies may not take as long to bake.
