- 1/3 cups Vegetable Oil
- 2 Tablespoons Honey
- 1-1/2 cup Sugar
- 1 teaspoon Vanilla Extract
- 1-1/2 cup Flour
- 3/4 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 2 Tablespoons Ground Ginger
- 1 Tablespoon Cinnamon
- 1/4 teaspoons Ground Cloves
- 1/4 teaspoons Ground Nutmeg
Directions

1Preheat oven to 350°F.

2In a large bowl, whisk together the soy milk, oil, honey, sugar, and vanilla extract. Add in the flour, baking powder, baking soda, and spices. Whisk until combined.

3Pour the batter into lined cupcake tins. Bake at 350°F for 20-22 minutes, or until a tester comes out clean from the center of the cupcakes.
