  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1/2 cup brown sugar
  • 1/2 cup butter, at room temperature, plus more for the cookie sheets
  • 1 egg, beaten
  • 1/2 cup molasses
  • Dried currants or raisins, for decorating

    Sift the flour, baking powder, baking soda, salt, and ginger together into a medium bowl and set aside.

    Using an electric mixer, cream the butter and brown sugar together until light and fluffy, about 2 minutes.

    Gradually add the flour mixture and stir until the dough is thoroughly combined and comes together in a ball.

    Divide the dough in half and wrap each ball in plastic wrap; chill in the refrigerator for several hours or overnight.
