- 1 1/3 cups unbleached flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon ground cloves (optional)
- 1 egg
- 1 1/4 cups milk
- 1/4 cup molasses
- 3 tablespoons canola oil
- butter or oil, for griddle

3Add milk, beat in molasses, then canola oil. Mix in dry ingredients until smooth.

4Using a quarter cup measure, spread pancake on preheated griddle and cook until golden brown.
