- 7 or 8 medium carrots
- 1 Tbsp. sugar
- 1 tsp. cornstarch
- 1/4 tsp. salt
- 1/4 tsp. ginger
- 1/4 c. orange juice
- 2 Tbsp. butter
Directions

1Slice carrots diagonally into 1/8 to 1/4-inch thick chunks. Cook 7 to 10 minutes.

2Combine in small saucepan the sugar, cornstarch, salt and ginger.

3Cook 7 to 10 minutes.

4Add orange juice and boil 1 minute.

5Add butter.

6Pour over hot carrots and toss.

7Garnish with chopped parsley.

8Serves 6.
