- 1 lb. carrots, peeled and sliced 1-inch thick
- 1 c. chicken broth
- 3 Tbsp. honey
- 2 Tbsp. butter/margarine
- 1 Tbsp. lemon juice
- 1 tsp. minced fresh ginger root
- 1/4 tsp. nutmeg
- 1/4 tsp. salt
Directions

1In skillet, combine carrots and chicken stock.

2Bring to boil. Cover.

3Reduce heat and simmer 10 minutes.

4Drain.

5Add remaining ingredients.

6Cook over medium heat, stirring constantly, until carrots are glazed, about 2 minutes.
