  • 2 acorn squash
  • 1/3 c. fresh orange juice
  • 1/2 c. brown sugar
  • 1/4 c. corn syrup
  • 1/4 c. butter or oleo
  • 2 Tbsp. grated lemon rind
  • 1/8 tsp. salt

Directions

    Cut off ends of squash.

    Slice crosswise into 1-inch rings and remove seeds.

    Place in a single layer in large, shallow baking dish and add orange juice.

    Cover and bake at 350° for 30 minutes. Combine brown sugar and remaining ingredients; simmer 5 minutes. Pour over squash rings and bake, uncovered, 15 minutes longer, basting occasionally.
