  • 2 cups Sugar
  • 2 whole Eggs
  • 1 cup Canola Oil
  • 2 cups Flour
  • 1 teaspoon Salt
  • 1 teaspoon Soda
  • 1 teaspoon Cinnamon
  • 3 cups Apples, Peeled And Diced
  • 1-1/2 cup Pecans, Chopped, Divided
  • 1-1/2 cup Powdered Sugar
  • 3 Tablespoons Water
  • 1 teaspoon Vanilla

    Preheat oven to 350 degrees.

    Cream sugar, eggs and oil. Sift flour, salt, soda and cinnamon into the egg mixture. Add apples and 1 cup chopped pecans. The mixture will be so thick that you will have to work with a spoon when you mix the apples. Mix well, and place in a greased and floured 12x8x2 pan. Bake for 45 minutes, and test for doneness.

    Make the glaze by mixing powdered sugar, water, and vanilla. After the cake is almost cool, spread with glaze and sprinkle with remaining 1/2 cup chopped pecans.
