- 2 lb. carrots
- 1/2 c. water
- 2 Tbsp. butter or margarine
- 1/4 tsp. cinnamon
- 2 Tbsp. honey
- 2 tsp. lemon juice
- 1/2 c. chopped toasted walnuts (optional)
Directions

1Peel carrots and cut into 3-inch strips.

2Place in a large skillet.

3Add water and butter.

4Cover and cook until tender-crisp, about 5 to 10 minutes, adding more water if necessary.

5When carrots are tender, liquid should be nearly gone. Gently stir in the cinnamon, honey and lemon juice.

6Simmer for a few minutes.

7Add walnuts, if desired and heat for 1 minute longer.
