- 1 lb. fresh carrots, cut in 2 to 3-inch pieces
- 1 1/2 c. orange juice
- 1/2 c. light brown sugar
- 1 1/2 Tbsp. margarine
- 1 Tbsp. cornstarch
- 1/4 c. cold water
- pinch of ground ginger
Directions

1Steam carrots just until tender.

2Transfer to serving bowl and keep warm.

3Combine orange juice, sugar and margarine in a saucepan and heat almost to boiling point.

4Dissolve cornstarch in water; stir in and cook until clear and thickened.

5Add ginger. Pour over carrots.
