- 1 lb. carrots
- 1 Tbsp. vegetable oil
- 1/2 c. water
- 2 tsp. cornstarch
- 2 tsp. brown sugar
- 1/4 tsp. salt
- 1 tsp. vinegar
- 1/4 c. water
Directions

1Scrape carrots; cut into thin slices.

2Saute carrots in oil in large skillet 2 to 3 minutes.

3Add 1/2 cup water; bring to a boil. Cover; reduce heat.

4Simmer 3 minutes or until crisp tender. Combine cornstarch and remaining ingredients; stir into carrots. Cook over medium heat, stirring constantly until thickened.

5Makes 4 servings.
