- 2 1/2 c. sliced carrots (about 3/4 lb.)
- 1/4 c. water
- 1/4 c. plus 2 Tbsp. unsweetened orange juice
- 2 tsp. reduced-calorie margarine
- 1 1/2 tsp. cornstarch
- 1/8 tsp. salt
- dash of pepper
Directions

1Combine carrots and water in a medium saucepan; cover and cook over medium heat 15 minutes or until crisp-tender.

2Drain, reserving liquid; add enough water to liquid to make 3 tablespoons. Set carrots aside.

3Combine carrots, liquid, orange juice and the next 4 ingredients in a medium saucepan.

4Bring to a boil over medium heat, stirring constantly.

5Cook for 1 minute or until thickened.

6Add carrots; cook 1 minute, stirring well.

7Transfer to serving dish.

8Yields 4 servings (about 68 calories per 1/2 cup serving).
