  • 6 boneless chicken breasts.
  • 1/2 cup thinly sliced onions
  • 1/3 cup broccoli flowers
  • 1/2 cup chopped beans
  • 1/3 cup diced potatoes
  • 1/2 cup chopped onion stalk/stems
  • 2 tbsp lemon juice
  • 1 ginger chopped
  • 2 tbsp mustard paste
  • 4 tbsp honey
  • 1 tsp red chilli flakes
  • 6 tbsp orange juice
  • 2 tbsp black pepper
  • 1 tsp vinegar
  • 1 Salt as per taste
  • 1 cup orange juice
  • 1/2 tsp red chilli flakes
  • 2 tbsp honey
  • 2 tsp mustard paste

Directions

    In a bowl,mix ginger,salt,mustard paste,orange juice,black pepper,vinegar,red chilli flakes,honey & lemon juice.

    Marinate Chicken in this mixture for an hour.

    Preheat the oven to 200C (400F).

    Heat a non-stick pan.Add onions,beans,potatoes,broccoli,onion stems to it & roast for 2 minutes.

    Spread the vegetables in a baking tray.Keep the marinated chickens with the marinade on these vegetables.Cook in the oven till done.

    Meanwhile,mix orange juice,red chilli flakes,honey & mustard paste in a bowl.Cook it in a pan till reduced to half the original quantity.

    Mid-way through the baking,glaze the chicken with this mixture & continue till the chicken is cooked.
