Glazed Ginger Carrots

- 24 carrots, cut into 1-inch lengths
- 1/4 c. brown sugar
- 1 1/2 tsp. grated fresh ginger
- 4 Tbsp. butter
- dash of salt
Directions

1Cook carrots in just enough water to cover in a saucepan with a tight lid.

2When carrots are tender, drain and return to pan. Add butter, brown sugar, ginger and salt.

3Mix very well.

4Cook over low heat, turning often for about 5 minutes.

5Transfer to a heated serving dish.

6Serves 12.
