Glazed Lamb Chops

  • 4 to 6 lamb chops, 3/4-inch thick
  • salt and pepper to taste
  • 2 Tbsp. vegetable oil
  • 1/2 tsp. curry powder
  • 1/2 c. orange juice
  • 2 Tbsp. lemon juice
  • 4 Tbsp. honey
  • 1 (11 oz.) can mandarin oranges, drained

Directions

    Sprinkle chops with salt and pepper.

    Brown both sides well under broiler.

    Drain all fat.

    Place in oiled baking dish. Combine curry powder, orange juice, lemon juice and honey.

    Pour over chops and bake in a preheated 350° oven for 30 to 45 minutes. Add oranges to sauce for last 5 minutes to warm them.
