Glazed Lemon Cake

- 2 sticks butter, softened
- 2 c. sugar
- 3 eggs
- 3 c. unbleached flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. buttermilk
- 2 Tbsp. lemon zest
- 2 Tbsp. fresh lemon juice
Directions

1Preheat oven to 325°.

2Grease a 10-inch tube or Bundt pan. Cream butter and sugar until light and fluffy.

3Beat in eggs, one at a time.

4Continue to beat until light.

5Sift together flour, baking soda and salt.

6Stir dry ingredients into egg mixture alternately with buttermilk, beginning and ending with dry ingredients.

7Add lemon zest and juice.

8Pour batter into prepared pan.

9Bake for 1 hour and 5 minutes.

10Cool cake for 10 minutes. Remove cake from pan and spread icing at once, while cake is hot.
