  • 3/4 cup sugar
  • 1/2 cup Land O Lakes Margarine, softened
  • 2 Land O Lakes Eggs
  • 2 tablespoons pear nectar or orange juice
  • 1/2 teaspoon vanilla
  • 1 large (1 1/4 cups) ripe pear, unpeeled, shredded
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/4 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar
  • 1 to 2 tablespoons pear nectar or orange juice

Directions

    Heat oven to 350F.

    Grease bottom only of 9x5-inch loaf pan; set aside.

    Combine sugar and butter in bowl.

    Beat at medium speed, scraping bowl often, until creamy.

    Add eggs, pear nectar and vanilla; continue beating until well mixed.

    Add shredded pear; continue beating until combined.

    Add all remaining bread ingredients; beat at low speed just until mixed.

    Spoon batter into prepared pan.

    Bake 50-60 minutes or until toothpick inserted in center comes out clean.

    Cool 10 minutes; remove from pan.

    Combine all glaze ingredients in small bowl.
