  • 2 c. finely chopped yellow squash
  • 1 c. finely chopped onion
  • 1 c. finely chopped green pepper
  • 1 egg, beaten
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1/2 c. plus 1 Tbsp. all-purpose flour, unsifted

Directions

    Combine first 5 ingredients; mix well.

    Stir in flour; drop by tablespoons into 1/2-inch hot oil.

    Cook until browned, turning once.

    Drain on paper towel.
