Glazed Red Raspberry Pie

- 1 1/2 qt. raspberries
- 1 c. sugar
- 2 1/2 Tbsp. cornstarch
- 1/2 c. water
- 1 Tbsp. butter
- 1 Tbsp. lemon juice
- red food coloring
- 1 (9-inch) baked pie shell
Directions

1Wash and drain berries.

2Crush 1/2 quart of the berries and combine with the sugar, cornstarch, water and lemon juice in saucepan.

3Bring to a boil and cook 2 minutes, or until clear; add butter and enough red coloring to make bright color.

4Strain out the seeds.

5Place the remaining quart of berries into the baked pie shell.

6Spoon the glaze over the berries.

7Chill.

8Garnish with whipped cream, if desired.
