- 1 lb. sweet potatoes, peeled and cut into 1/2-inch thick slices
- vegetable cooking spray
- 1 Tbsp. cornstarch
- 1 Tbsp. brown sugar
- 3/4 c. unsweetened orange juice
- 2 Tbsp. lemon juice
Directions

1Place potatoes in a 1-quart casserole, coated with cooking spray.

2Combine cornstarch and brown sugar in a small bowl.

3Add orange and lemon juices, stirring well.

4Pour over potatoes. Cover and bake at 425° for 40 minutes or just until potatoes are tender and glaze is thickened.
