Glazed Vegetables

Ingredients

  • 2 c. peeled and cubed turnips or rutabagas
  • 2 c. carrots, cut into 1-inch pieces
  • 2 c. peeled and cubed sweet potatoes or yams
  • 2 c. peeled and cubed winter squash
  • 2 c. celery, cut into 1-inch pieces
  • 1 c. onions, slivered
  • 3 Tbsp. cider vinegar
  • 3 Tbsp. dark corn syrup
  • 1 Tbsp. butter or margarine, melted
  • 1/2 c. brown sugar
  • 1/4 tsp. salt
  • 3/4 tsp. ground ginger
  • 1/2 tsp. cinnamon
  • 3 Tbsp. vegetable water

Directions

    Combine ingredients in a bowl.

    Mix well.

    Pour over vegetables and mix well to coat.

    Bake in preheated 400° oven for 20 minutes. Baste occasionally (more vegetable water may be used, if necessary).

    Stir well and sprinkle with toasted, slivered or sliced almonds.
