Glorious Mashed Potatoes(Serves 4)

  • 3 large baking potatoes (about 1 1/2 lb.)
  • 1/4 c. milk
  • 2 Tbsp. butter or margarine, softened
  • 1/2 tsp. salt
  • 1/4 c. sour cream
  • 1 (3 oz.) pkg. cream cheese with chives, at room temperature
  • 1/8 tsp. black pepper
  • 1 tsp. minced fresh or freeze dried chives (optional)

Directions

    Peel potatoes and cut them into 1/4-inch slices.

    Place the slices in a 2-quart saucepan.

    Add water to cover.

    Set the lid on the pan askew and boil for 15 minutes or until tender.

    Drain the potatoes and mash with a fork or potato masher, adding the milk to moisten them.

    Mix in the butter, sour cream and cream cheese until well blended.

    Season with the salt and pepper and sprinkle with the chives, if used.
