- 1 lb. Ricotta cheese
- 2 c. flour
- 1 egg
Directions

1Beat egg before you mix in rest of ingredients.

2Flour hands and separate dough into 4 sections.

3Roll each section into snakes on a floured surface.

4Cut 1-inch pieces out of the snakes and, with thumb, press flat.

5Fast freeze (about 10 minutes) on a cookie sheet.

6When hard, cook in boiling water (salted) for 5 minutes after they rise to the top of the pot.

7Serve with spaghetti sauce.
