- 1 egg yolk, beaten
- 1 tsp. salt
- 1/2 c. sifted flour
- butter
- Parmesan cheese
Directions

1Clean and peel potatoes.

2Boil until soft.

3Mash.

4To the warm mashed potato, add egg, salt and enough of the flour to make dough.

5Knead dough until smooth.

6Roll into pieces 3/4-inch thick and 1 1/2 inches long.

7Drop into boiling water and boil until dumpling rises to the top.

8Drain.

9Serve with butter and Parmesan cheese.
