- 6 sheets filo pastry
- 50g butter, melted
- 1 onion, chopped
- 2 cups english spinach leaves
- 125g block PHILADELPHIA Cream Cheese, softened
- 4 eggs, beaten
- 1/3 cup cream
- 100g goats cheese, crumbled
- semi sun-dried tomatoes or roasted tomatoes
Directions

1Brush one sheet of pastry with butter to moisten.

2Lay another sheet over the top.

3Continue with remaining pastry and butter.

4Cut into 6 squares and push into greased 1 cup muffin pans.

5Saute onion in remaining butter until golden.

6Add spinach, cook for 2 minutes.

7Beat Philly* until smooth, add eggs and cream and mix until combined.

8Place spinach into muffin pans, pour over the Philly* mixture.

9Top with goats cheese and sun dried tomato.

10Season to taste.

11Bake in a 180C oven for 30 minutes.

12Cool 5 minutes before serving.
