- 1 c. sifted all-purpose flour
- 4 tsp. baking powder
- 1 c. corn meal (yellow)
- 1 c. milk
- 1/4 c. sugar
- 3/4 tsp. salt
- 2 eggs
- 1/4 c. soft shortening
Directions

1Sift together in bowl the flour, sugar, baking powder and salt.

2Stir in corn meal.

3In a small bowl,

4beat eggs, milk and shortening.

5Add all at once to corn meal mixture.

6Stir with fork until flour is just moistened.

7Even if batter is lumpy, do not stir anymore.

8Pour into well-greased 9 x 9 x 2-inch pan.

9Bake in a 425° oven for 20 to 25 minutes, or until done.
