Ingredients

  • 1 pkg. dry yeast
  • 1/4 c. sugar
  • 2 tsp. salt
  • 1 tsp. grated lemon rind
  • 4 or 5 c. all-purpose flour, divided
  • 3/4 c. warm water
  • 1/4 c. vegetable oil
  • 3 eggs, slightly beaten
  • 1/3 c. raisins
  • butter or margarine, melted

Directions

    Dissolve yeast in warm water in a large mixing bowl; let stand 5 minutes.

    Stir sugar, oil and salt into yeast mixture.

    Add eggs, lemon rind and 2 cups flour; beat at low speed with an electric mixer until mixture is smooth.

    Stir in enough remaining flour to make a soft dough.

    Turn dough out onto a floured surface.

    Add raisins; knead until smooth and elastic (about 8 to 10 minutes).

    Place in a well-greased bowl, turning to grease top. Cover; let rise in warm place (85°) free from drafts, 1 hour or until doubled in bulk.
