Golden Puffed Broccoli

Ingredients

  • 2 bunches broccoli, cut into spears or 2 pkg. (10 oz. each) frozen broccoli spears, cooked and drained
  • 2 egg whites (room temperature)
  • 1/4 tsp. salt (optional)
  • 1/2 c. shredded part skim Swiss cheese (2 oz.)
  • 1/2 c. Hellmann's real mayonnaise

Directions

    Arrange cooked broccoli in shallow 1 1/2 quart pan or broiler-proof serving dish.

    In small bowl with mixer at high speed, beat egg whites and salt until stiff peaks form.

    Fold in cheese and real mayonnaise and spoon evenly over broccoli.

    Broil 6-inches from source of heat 4 minutes or until golden brown. Serve immediately; 15 mg cholesterol per serving.
