  • 1 cup yellow cornmeal
  • 2/3 cup white sugar
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 egg
  • 1 cup buttermilk
  • 1/2 cup butter

    Preheat oven to 400 degrees F

    On stove in a 9 inch, oven ready pan melt butter over low heat

    Let butter sit and cool a little

    Combine the dry ingredients in large bowl

    Combine the egg, buttermilk and slowly mix in the warm butter

    Slowly stir the liquids into the dry ingredients until well mixed

    Use a paper towel to coat the 9 inch pan with the residue of the melted butter

    Poor the mixture into the 9 inch pan

    Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
