Ingredients

  • 1 lb. beans (navy or Great Northern), wash and picked
  • 1 c. onion, chopped
  • 1/2 c. green onions, chopped
  • 1 stalk celery, chopped
  • 1 carrot, chopped
  • 3/4 c. green bell pepper, chopped
  • 3/4 c. red bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp. lemon juice
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. thyme
  • 1/4 tsp. cayenne pepper
  • 2 bay leaves
  • 1/2 c. parsley, snipped
  • 2 1/2 oz. black olives

Directions

    Place beans in large pot with 12 cups water.

    Add all ingredients except parsley and olives.

    Bring to a boil, then simmer for 3 hours.

    Five minutes before beans are finished, add parsley, olives, salt and pepper to taste.

    Can be served over cooked white rice.
