Good Potato Soup

  • 6 strips bacon
  • 1 c. chopped onion
  • 2 1/2 lb. cubed potatoes
  • 1 c. sliced celery
  • 1/2 c. sliced carrots
  • 3 c. water
  • 1 1/2 tsp. salt
  • 2 c. milk
  • 2 c. light cream
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • shredded Cheddar cheese
  • parsley

Directions

    Cook bacon and onion in 4 quart Dutch oven, drain and place on paper towels.

    Place potatoes, celery, carrots, water and salt in Dutch oven.

    Cover and cook over high heat until it comes to a boil, about 5 minutes.

    Reduce heat to low and simmer 15 minutes until vegetables are tender.

    Drain in colander.

    Place half the potatoes in blender, puree until smooth.

    Return puree mixture, remaining potato mixture, bacon and onions back in Dutch oven.

    Stir in cream, salt and pepper.

    Cover and cook over medium heat about 15 minutes, stirring occasionally.

    Do not boil.

    Place in serving bowls and sprinkle with cheese and parsley.
