  • pastry for 2 crust pie
  • 3 Tbsp. dry cookie or bread crumbs
  • 4 c. gooseberries
  • 2 c. sugar
  • pinch of salt
  • 6 Tbsp. cornstarch

Directions

    Put crumbs on bottom of unbaked crust.

    Combine gooseberries, sugar, cornstarch and salt.

    Fill crust; top with strips or vented top crust, sealing well by moistening edges with water.

    Trim and flute edges.

    Bake in a 425° oven for 10 minutes.

    Reduce heat to 350° and bake for 45 to 50 minutes or until crust is brown and juices nicely thickened.
