- pastry for 2 crust pie
- 3 Tbsp. dry cookie or bread crumbs
- 4 c. gooseberries
- 2 c. sugar
- pinch of salt
- 6 Tbsp. cornstarch
Directions

1Put crumbs on bottom of unbaked crust.

2Combine gooseberries, sugar, cornstarch and salt.

3Fill crust; top with strips or vented top crust, sealing well by moistening edges with water.

4Trim and flute edges.

5Bake in a 425° oven for 10 minutes.

6Reduce heat to 350° and bake for 45 to 50 minutes or until crust is brown and juices nicely thickened.
