- oil
- 2 medium onions, chopped
- 1 c. chopped green and red peppers
- 6 cloves garlic, crushed
- 4 Tbsp. chili powder
- 2 tsp. ground cumin
- 3 tsp. oregano
- 2 lb. ground beef
- 1 Tbsp. salt
- 1/2 tsp. black pepper
- 3 1/2 to 4 c. tomatoes or 1 (2 lb.) can, undrained
- 2 (1 lb. each) cans red kidney beans, undrained
Directions

1Heat oil in a 4 or 5-quart pot. Saute onion until clear; add peppers and garlic and saute until limp.

2Add chili powder, cumin, oregano, ground beef, salt and pepper.

3Cook slowly, stirring often, until meat is brown and broken apart.

4Add tomatoes and kidney beans, including liquid.

5Stir well to combine ingredients.
