Ingredients

  • oil
  • 2 medium onions, chopped
  • 1 c. chopped green and red peppers
  • 6 cloves garlic, crushed
  • 4 Tbsp. chili powder
  • 2 tsp. ground cumin
  • 3 tsp. oregano
  • 2 lb. ground beef
  • 1 Tbsp. salt
  • 1/2 tsp. black pepper
  • 3 1/2 to 4 c. tomatoes or 1 (2 lb.) can, undrained
  • 2 (1 lb. each) cans red kidney beans, undrained

Directions

    Heat oil in a 4 or 5-quart pot. Saute onion until clear; add peppers and garlic and saute until limp.

    Add chili powder, cumin, oregano, ground beef, salt and pepper.

    Cook slowly, stirring often, until meat is brown and broken apart.

    Add tomatoes and kidney beans, including liquid.

    Stir well to combine ingredients.
