- 6 medium potatoes
- 2 c. shredded Cheddar cheese
- 1/2 c. butter
- 1 1/2 c. sour cream
- 1/3 c. finely chopped green onions
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. butter
- paprika
Directions

1Cook potatoes in skins; cool.

2Peel and shred coarsely.

3In saucepan over low heat, combine cheese and butter, stirring occasionally until almost melted.

4Remove from heat and blend in sour cream, onions and seasonings.

5Fold in potatoes and turn into greased 2-quart casserole dish.

6Dot with 2 tablespoons butter and sprinkle with paprika.

7Bake, uncovered, for 30 minutes or until heated through.

8Serves 8.
