  • 6 medium potatoes with skins
  • 2 c sharp cheddar cheese
  • 1/4 c butter
  • 1-1/2 c sour cream (room temp)
  • 1/3 c green onions, chopped
  • 1 tsp salt
  • 1/4 tsp pepper

Directions

    Cook potatoes with skins until tender.

    Let cool.

    Peel and grate on large side of cheese grater.

    In a saucepan on low heat, combine cheese and butter.

    Keep stirring until almost melted. Remove from heat and blend in sour cream.

    Add onions, salt and pepper.

    Add potatoes and mix. Pour into a greased 2 qt casserole dish.

    Bake at 350° for 25 minutes.
