Ingredients
- 6 medium potatoes with skins
- 2 c sharp cheddar cheese
- 1/4 c butter
- 1-1/2 c sour cream (room temp)
- 1/3 c green onions, chopped
- 1 tsp salt
- 1/4 tsp pepper
Directions

1Cook potatoes with skins until tender.

2Let cool.

3Peel and grate on large side of cheese grater.

4In a saucepan on low heat, combine cheese and butter.

5Keep stirring until almost melted. Remove from heat and blend in sour cream.

6Add onions, salt and pepper.

7Add potatoes and mix. Pour into a greased 2 qt casserole dish.

8Bake at 350° for 25 minutes.
