  • 2 c. shredded Cheddar cheese
  • 1/2 c. butter
  • 1 1/2 c. sour cream
  • 1/2 c. chopped green onions
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 8 medium potatoes, peeled and coarsely shredded
  • 2 Tbsp. butter

Directions

    Heat cheese and 1/2 cup butter in saucepan over low heat until partially melted, stirring occasionally. Remove from heat.

    Stir in sour cream, green onions, salt and pepper.

    Fold in potatoes. Spoon into greased 8-inch glass baking dish. Dot with 2 tablespoons butter. Bake at 350° for 25 minutes or microwave, covered, on High for 12 minutes.
