  • 8 medium size potatoes, boiled in skins
  • 1/4 c. oleo
  • 1 1/2 c. grated cheese
  • salt and pepper to taste
  • 1/2 pt. sour cream
  • 1 (10 1/2 oz.) can cream of chicken or mushroom soup
  • 1/2 c. chopped green onions (also tender green parts)
  • 1/2 c. crushed corn flakes
  • 2 Tbsp. melted oleo

Directions

    In saucepan, put cheese, 1/4 cup oleo and soup; heat until cheese is melted, stirring frequently.

    Remove from heat and stir in sour cream.

    Peel and finely chop the potatoes.

    Mix with chopped onion and prepared sauce.

    Put in greased 9 x 13-inch pan. Mix together crushed corn flakes and 2 tablespoons melted oleo. Sprinkle over top of casserole.

    Bake at 350° for 45 minutes or until bubbly and slightly browned.

    Serves 8 to 10.
