- 1 lb. spinach
- 1/4 c. cream
- 2 Tbsp. butter or margarine
- 1 Tbsp. minced onion
- 1 tsp. horseradish
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1Remove all stems, roots and bruised leaves from spinach.

2Wash thoroughly.

3When all sand and grit is removed, place in heavy saucepan.

4Cook 8 to 10 minutes.

5Drain and chop and return to saucepan.

6Add cream, butter or margarine, onion, horseradish and a mixture of salt and pepper and stir to blend.

7Return to heat; cook until heated thoroughly.

8Makes 4 servings; takes 25 minutes.
