  • For the cake:
  • 3 cups sifted flour
  • 1 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. freshly ground nutmeg
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. ground cloves
  • 1 cup oil (canola preferred)
  • 2 3/4 cups sugar
  • 3 eggs, room temperature
  • 1 1-lb. can pumpkin (not pie mix)
  • For the frosting:
  • 4 tsp. room temperature butter
  • 8 oz. room temperature cream cheese
  • 1 tsp. vanilla
  • 1/2 tsp. freshly grated nutmeg
  • 2 tbs. Kahlua
  • 1 box confectioner's sugar (approx.)

    ["Set oven to 350. Grease and flour a 10-inch tube pan. Sift the flour with the salt, baking powder and baking soda and set aside. Cream the oil with the sugar. Add eggs one at a time and mix thoroughly after each one. Add vanilla and mix. Add all the spices at once and mix again. Add half of the dry ingredients, then half of the pumpkin, being careful not to overbeat. Repeat the process. Transfer to prepared tube pan and drop pan on counter to eliminate any air bubbles. Run a spatula about 2 inches deep halfway between the outside of the pan and the tube (to create a \"crown\"" as it bakes) and bake for approximately 1 hour and 15-20 minutes. Check cake after one hour with cake tester; baking time can vary.""
