  • 1 c. rice
  • 4 c. water
  • 1 tsp. butter
  • 1/2 tsp. salt
  • 1 c. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 4 c. milk
  • cinnamon

Directions

    Boil rice in the water seasoned with the butter and salt until water is almost completely absorbed.

    Remove from heat; let stand about 10 minutes.

    In a bowl, beat together the sugar, eggs and vanilla until frothy.

    Add the milk.

    Stir mixture into rice slowly over heat.

    Fold until most of the mixture is absorbed.

    Sprinkle with cinnamon.

    Serve warm.

    Leftovers can be warmed again or served cold with milk and sugar.
