- 1 c. rice
- 4 c. water
- 1 tsp. butter
- 1/2 tsp. salt
- 1 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 4 c. milk
- cinnamon
Directions

1Boil rice in the water seasoned with the butter and salt until water is almost completely absorbed.

2Remove from heat; let stand about 10 minutes.

3In a bowl, beat together the sugar, eggs and vanilla until frothy.

4Add the milk.

5Stir mixture into rice slowly over heat.

6Fold until most of the mixture is absorbed.

7Sprinkle with cinnamon.

8Serve warm.

9Leftovers can be warmed again or served cold with milk and sugar.
