- 1 envelope unflavored gelatin
- 1/2 c. cold water
- 6 eggs, separated
- 1 1/2 c. sugar, divided
- 3/4 c. lemon juice
- 1 1/2 tsp. lemon rind
- 1 (8 or 9-inch) angel food cake, broken into small pieces
- 1 c. heavy cream, whipped and sweetened
- shredded coconut, tinted green
Directions

1Sprinkle gelatin over water and let soften.

2Blend yolks and 3/4 cup sugar in top of double boiler.

3Add lemon juice and rind and cook over simmering water, stirring constantly (do not let water touch bottom of pan).

4When thick as medium white sauce, remove from heat.

5Add softened gelatin and stir until dissolved. Chill until mixture thickens and mounds.
