  • 3 lb. butternut or acorn squash
  • 1 Tbsp. oil
  • 1 tart apple
  • 3 Tbsp. butter
  • 1/4 tsp. dried thyme
  • 1/4 c. brown sugar, maple syrup or molasses
  • salt and pepper

Directions

    Heat oven to 400°.

    Half squash and scoop out seeds.

    Rub cut surfaces and cavities with oil.

    Put, flesh down, on a baking sheet or bake until tender, 30 to 40 minutes.

    Scoop out flesh from squash.
