  • 1 c. yellow cornmeal
  • 2 c. boiling water
  • 3 Tbsp. butter
  • 1 tsp. salt
  • 3 large eggs, well beaten
  • 1 c. milk

Directions

    Slowly add cornmeal to boiling water, stirring constantly until thick and smooth.

    Add butter and salt; cool to lukewarm. Then add eggs and milk.

    Beat for 2 minutes.

    Pour into greased casserole and bake in preheated 375° oven for 35 minutes or until golden brown.

    Spoon out while piping hot and pass more butter.
